Also known as sea beans, sea asparagus, samphire, pousse-pied and glasswort. Until recently, Salicornia Tips were only available once a year in the summer in limited amounts. Today they are available fresh year round and grown organically. It is a fresh emerald green vegetable that has a wonderfully salty flavor and a refreshing crisp and crunchy texture. Soak the sea beans over night in fresh water and discard water before using. This removes the excess salty taste. Originally picked in the Middle Ages by fishermen's families living near the coasts of the Netherlands, Northern France and Great Britain, Salicornia has been a favorite of the British Royal Family for years. In the recent past, it has become a gourmet delicacy throughout Western Europe and is currently featured in gourmet restaurants from New York to London, Paris, Brussels and Amsterdam. | |||||||||||||||||||||||||||||||||
