Available early Summer to Fall.

Grows in the same place year after year. European season is Autumn, American season is mid-Summer to Autumn. Quite unusual the fruit body is built up of many layers that resemble a cauliflower or a brain. It ages from pale yellow-white to white to brown. It has a sweet smell and a lovely nutty flavor. Cleaning needs care, as there are so many nooks and crannies. Dip them in a batter made with beer rather than milk and deep-fry to make a wonderfully crisp nutty hors d'oeuvres. Equally good sliced fresh and added to stews and casseroles.
