Mushroom - Tuber Melanosporum (Black Winter)
Available November to February.
Also known as the "Black Diamond". Commercially shipped from Italy, France, USA, and China ¾ to 4 inches across with irregular shape, blackish brown in color, and marble red, brown interior.
Tuber Aestivum (Black Summer)
Available June to August.
Looks like the Winter Truffle but is usually bigger and tougher. It is best used fresh. Black Truffles are apt to be cheaper than the White because of their durability. Both can be preserved in oil or frozen.
