Black Garlic & Fig Jam


BLACK GARLIC & FIG JAM RECIPE

INGREDIENTS

  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 tbsp black mustard seed
  • 3 cloves black garlic, peeled
  • 1 cup chopped dried Mission figs
  • 1 cup water
  • ½ cup sugar
  • Sprig fresh thyme

INSTRUCTIONS

In a small saucepan, heat the olive oil over medium. Add the sliced onions and sauté for 3-4 minutes. Add the mustard seed, black garlic cloves, figs, water, sugar, and thyme. Stir until the sugar dissolves. Bring to a boil then reduce the heat to low. Cover and simmer, stirring occasionally, for 1 hour. Allow the jam to cool down to room temperature. Remove and discard the thyme sprig. Spoon jam into a small glass jar. Cover and refrigerate until chilled.
